So Easter’s almost here and obviously you’ve been depriving yourself of everything that is good in the world (sweets) for the past few weeks. I’m you’re feeling nicely pleased with yourself. *Slow clap* Awwwww, good for you. Sure aren’t you just great with your bit of willpower now?

I bet you’re foaming at the chops right now for a measly aul’ square of Dairy Milk. The thoughts of a Creme Egg is making you weak at the knees. You’d probably punch your own mother square in the face for a Chomp (I know I would and I don’t even do ‘Lent’). Well fret not, dear reader. The weekend is almost upon us, and here is a recipe for something to use up all those packets of chocolate sweets and Easter eggs you’ll probably definitely be buying with wild abandon come Saturday night.

Note: These cookies are suitable for Lent participants, Atheists, Heathens, Buddhists, Slackers and kids who got waaaaaaaay too many Easter eggs. And NO ONE ELSE. Joke. Everyone can have some. Easter Cookies

Ingredients: Makes 20-25 Cookies

  • 300g Plain Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Bicarbinate of Soda
  • ¼ Teaspoon of Salt
  • 250g Butter, softened
  • 250g Caster Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • Chocolate Sweets/Chips/Broken Easter Egg/Chopped Chocolate Bars

Method

1.

Preheat your oven to 180°C and line 1 or 2 baking trays with baking paper/non stick mats. You’ll need to use them more than once.

Put the flour, baking powder, bicarb and salt into a bowl and mix together.

In another bowl, cream the butter and sugar together with an electric whisk until light and fluffy.

Mix in the egg and vanilla.

Add in the flour mixture and beat until fully combined. It should make a stiff dough. If you have any chopped Easter eggs or chocolate chips or chunks of plain chocolate, mix this in now.

Note: Don’t use anything with a shell (like Smarties) or anything with caramel in it at this stage or it will ruin the final result. You can add this sort of thing at the end.

Take a piece of the cookie dough and roll it into a ball your hands. You want something golfball sized. Place on the baking tray, leaving plenty of room between them – 5 to 6 cookies per tray.

Bake in the oven for 12-13 minutes.

Remove from the oven and immediately take the rest of your chocolate pieces and poke them into the still soft cookie. I used Mini Eggs, Smarties, Peanut M+Ms and Crispy M+Ms but you use whatever the hell you like. Go nuts with it! Cram it all on there! Repeat until all the cookie dough is gone.
